{baking} toasted marshmallow cupcakes

The title is a bit of a misnomer. There is so much more to these cupcakes than marshmallow. When I stumbled across this recipe from Joy the Baker, I couldn’t even fathom it. Chocolate cupcake stuffed with a cookie dough ball (!!!) then topped with a marshmallow meringue. Seriously? No wonder she celebrated her 30th birthday with them. I’d celebrate with these everyday.


This is the second time I’ve made cupcakes from scratch. Both times, I’ve found the process long, a bit tedious (especially in terms of the number of bowls uses), but ultimately satisfying. Make that extremely satisfying. There’s nothing better than putting a stamp on something and saying: I made it. Really, I did. This recipe had to be created to impress people. A surprise cookie dough center? No one will see it coming. And – for this batch – I was able to use a Christmas present I received from Cat’s parents: a stuffed cupcake pan. The dough balls were easily incorporated with the use of this gem! Now if I could have only figured out the broil a little sooner:

I thought the broiler was on. It really wasn’t. I thought these cupcakes on the left were a bit toasty. They really weren’t. When I finally figured out how to use my oven, I cranked up the oven and nearly burnt these babies. What can I say, I’m apparently fire prone these days. [On Sunday, I caught a pan of brownies on fire. YES. On fire. On the stove. No one was hurt.]

If this doesn’t have the boyfriend’s name written all over it, I don’t know what does. It might fit well with my sweet tooth as well. Maybe a little too well ::: replaces jeans with sweatpants :::

I’ll do anything to make January a little more exciting. Wouldn’t you?

    Oh my gosh, Rose, these are ridiculous… in a good way. I am not one to even find sweets appealing before lunch, but I would like one, or make that, two of these cupcakes right about now. Please and thank you :) I’m sure your boyfriend is going to love ‘em.

    Seriously Rose, I’m trying to be healthy over here! (and I never met a cupcake I didn’t like). The website, http://mingmakescupcakes.yolasite.com/, has a bunch of awesome cupcake recipes as well. I’ve made two of them with successful results. You can also mix and match frostings/ and batter too. :)

    i have very fond memories of baking cookie dough-stuffed cupcakes with two of my friends as seniors in high school. i haven’ eaten them since, but dear god i remember them being heavenly. these look like quite a feat, rose – congrats on making something so beautiful!
