I didn’t realize it, but it seems that my cooking skills have become more advanced. I discovered this on Thursday when a recipe I chose to use seemed “too easy.” I browned some turkey, opened a few cans, and voila – dinner was served. I couldn’t help but feel disappointed by the lack of my own skills being part of the dish, even if it was quite delicious.
I did a search for Weight Watchers recipes on Pinterest, and this one came up. Bubble-Up Enchiladas. It was as easy as I wrote above. However, I think using premade biscuit dough drove the points up in this one, as just one of six servings was 10 points on WW Points+ (to put it in perspective, I only get 26 points per day, so this was a hearty portion of those). But still, it was delicious and the perfect thing to make at the end of a work week where I’d felt quite fatigued.
One thing I loved about this dish was how satiated it made me feel. I ate this after running a solid, fast 4 miles on the treadmill. I was fuller than normal (when I eat my vegetarian meals). I don’t plan on making a habit out of meat eating for personal reasons, but I don’t mind a lean meat every once in a while.
Tomorrow ends my week at the BF’s house, and I’m sad to see it end. We’ve had such a lovely & relaxing time together this week. Hope you’re having a similar sort of weekend.




I prefer to eat vegetarian too, but I’ve been eating a lot more meat lately. That sounds great!
